Grilled Flank Steak

The flank steak is scored diagonally before grilling so the barbecue sauce can seep into the meat rather than just lay on top. The barbecue sauce is applied throughout the grilling time to give this steak a real barbecue flavor. You can impress your guests at your next backyard barbecue with this mouth-watering steak.

  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon chili powder
  • 1 tablespoon margarine
  • 1/2 cup tomato sauce
  • 2 tablespoons vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/2 pounds beef flank steak, cut 3/4 inch thick

directions

  1. For sauce, in a small saucepan cook onion, garlic, and chili powder in margarine until tender. Stir in tomato sauce, vinegar, honey, salt, and pepper. Bring to boiling, stirring constantly. Boil 5 minutes or until sauce is slightly thickened.
  2. Meanwhile, trim fat from flank steak. Score steak diagonally into diamonds on both sides. Brush with sauce. Grill steak on an uncovered grill directly over medium coals for 7 minutes. Turn and grill to desired doneness, allowing 5 to 7 minutes more for medium. Brush occasionally with the remaining sauce.
  3. To serve, thinly slice the flank steak across the grain. Makes 6 servings.
  4. Broiling directions:Place meat on the unheated rack of a broiler pan. Broil 3 inches from the heat for 6 minutes. Turn and broil to desired doneness, allowing 6 to 8 minutes more for medium. Brush occasionally with sauce.
